I grew up in Canada and we always had pancake syrup or corn syrup on the table. The real deal blew my mind in my young adulthood, and I can never go back. Thank goodness I live in Canada! I hadn’t given any thought to how the tariffs would impact our maple syrup export to the U.S.
It is so hard to go back, but I do get a hankering for pancake syrup or karo every once in a blue moon! In the grand scheme of *everything* this particular tariff-impacted product is the least of our concern (though I do hope the CA maple producers aren't dually impacted), but it's certainly an apt metaphor for the pending class culture wars that will inevitably worsen. Best case scenario: perhaps it'll lead to another pancake syrup innovation. :(
Despite living in the Northeast, back in the 1960s modern housewives embraced the notion of artificially flavored maple syrup as being progressive - just like using canned veggies, TV dinners, and baby formula made of Karo syrup 😮 Dutch strop is a yummy alternative - traditionally made of beetroot😀
Ooh that totally tracks! Now I'm trying to think of contemporary analogous examples for this. Surely there are some! I do remember my grandma telling me about Karo baby formula!! I'll have to look into Dutch strop!
My husband bought a few extra bottles of maple syrup at Costco this week for just this reason. Everything seems like such an uncertain mess right now :/
Exactly. I'm focusing on both what we'll need to survive if food becomes scare and/or too expensive and what small things can we have to still bring joy into our meals like maple syrup.

Smart plan. Yea the uncertainty is unnerving. You don't want to be a hoarder, but also if you like your syrup you gotta think ahead.

Ha! Right?! I've been working on this silly syrup post for a week and still haven't made pancakes while writing it! I'll have to try your recipe now!
